So the short version is this: the 70-200mm f/2.8 S is again overall superb. Again, it's sharp for a zoom, sharp for a prime, sharp for any lens. Nikon's MTF charts suggest that the Z-mount S version is slightly better in the corners than the F-mount FL version. In that detail we do have some small things to talk about.
At f/5.6 and larger the aperture remains quite circular, instead of polygonal. In spite of all the plastic, this is the biggest and heaviest AF 80-200 f/2.8 AF ever from Nikon. It's 3.4" (88mm) around by 8.15" (207mm) long. The huge included bayonet hood is 4-5/8" diameter.
The low light and fast action performance of the 70-200mm f2.8 FL ED VR gives new life to older generation bodies. Although the D500 combined with this lens is an unrivaled combo, when working in the bush I couple a 200-400 f4 to the D500 and the 70-200 to a D300.

The new lenses include Internal focusing (IF), vibration reduction (VR), and a fully-electronic control system which does without the traditional aperture control ring (G).
